Potato Salad in November?

ElvenTiger, who is almost twelve years old, had a craving – a strong longing for our potato salad. “I really don’t see why it should only be for summer,” she lamented. “Why can’t we have potato salad on Thanksgiving if we want?”

We really didn’t think the gravy lovers would appreciate it as a replacement for mashed potatoes, but we decided we’d make her some potato salad this weekend, a few days before the holiday. There were still some chives in the garden, too, even though we’ve had a frost. They’re pretty hardy. We’ve all been enjoying the potato salad, and agree with her – it’s not just for summertime.

Here’s our recipe:

Cat Picnic Potato Salad
No cats were harmed in the making of this potato salad.

4 lbs. red potatoes
2 pickling cucumbers, finely chopped
1/2 red pepper, finely chopped
1 small onion, finely chopped
1 tomato, diced (optional)
Two Cat Dressing (see recipe below)

Boil potatoes until tender, then drain and cool in the refrigerator. Chop potatoes after they are cooled. In large bowl, place the potatoes, cucumbers, red pepper and onion. Add Two Cat Dressing and mix thoroughly.

Two Cat Dressing:

2 Tbsp. fresh chives, finely chopped
1 c. veganaise or mayonnaise
2 tsp. onion powder
1 tsp. garlic powder
2 1/2 Tbsp. sweet relish
1 tsp. salt
3 Tbsp. prepared stoneground mustard
1 tsp. celery seed
1/2 tsp. turmeric
black pepper, to taste

In a small bowl, combine all ingredients and mix well.
